Kovakkai Kadalai Curry

I got this recipe from SUN TV"s Unnavum Aarogiyamum program. It was prepared by Chef Jacob in his "oil less cooking series". But readers beware. This is not a fat free curry as it has 3 tbsps of cashewnut paste in it. The reason I tried this was to see how the kovakkai-kadalai combination worked out and also that the recipe had no tomatoes and oil in it.

The final result was ABSOLUTELY FANTASTIC. It had such an outburst of flavor ,really very different from the other curries I normally prepare. Now it has become my new favorite and I'll be trying this more often. So, I wanted to pass on the recipe to you also so that you can give it a try. Good luck and Happy Eating

Ingredients:
Kovakkai/Tindora- 20 (cut lengthwise) (half steamed)
Kadalaikkai/Boiled peanuts- 1 cup
Onion- 1 (finely chopped)
cashewnut paste- 3 tbsp
elachi-2
cloves- 2
cinnamon- 1" piece
chilli powder- 1 tsp (original recipe called for 2 tsp. But 1 was ok for me) turmeric- 1/4 tsp
curry leaves- 1 twig (finely chopped) salt- as required
Garam masala- 1/2 tsp

Procedure:
Heat pan until it's very hot. Then add the spices and saute them .Remember .....NO OIL. The cardamom will plump up a bit due to heat. Now add onions and some salt. Saute until it is light brown in color. You have to keep on sauteing every now and then as it does not have any oil and it might stick to the pan after a while.Now add curry leaves,ginger garlic paste and turmeric. Saute for a min. Then add chilli powder and saute for 2 more mins. Now add 1/2 a cup of water and mix well. Close and cook for 5 mins. After that the gravy will be a little thick. Now add kovakkai , peanuts and salt. Add nother cup of water and boil for 5 more minutes. Finally add garam masala and cashew paste. Mix well and boil to desired consistency.

This gravy goes very good with white rice, dosa and rotis.

Hi Kribha, I've never ventured anything more with Kovaikai except the regular fry. Though my GM used to make gravy with this with tamarind sauce. So this is a unique one for me. Kadalai combo is good. Goes well with roti I think. Looks gr8.

Now this one is a unique dish. Frying onions with out oil? I will try doing this and If I am successful, This is the way I am going to fry onions from now on.

Kribha, the curry looks rich and I feel like tasting it right away. Never tried with tindora in gravy dishes but boiled peanuts just love them in curries.

I have also never used kovakkai in a gravy based dish. This is the first time. But the final result was very tasty and satisfying. For me it tasted very good with plain rice than rotis. You should try it and see what suits your palate.

You can surely saute onions without any oil at all . When I first started to cook, I was using very less oil. But when back home for a vacation I noticed eveyone using so much of oil and thought that's the way I should cook. Now I've got so used to it that's it hard to break that habit off. :-(

This is the first time I'm trying kovakkai in a gravy dish. I promise, it was not gooey at all. I steamed the vegetable for a few minutes and then used it in the gravy. So, the vegetable was cooked just right. You should try it too.

I have all my curries posted under veg curries. I have made only 2 dishes with button mushrooms. One made with peas and the other with pepper. Didn't know which you were talking about. The only curry I make with kovakkai is stir fry with good amount of oil! :) Your recipe is nice! especially with cashew et all! :D I am not finding much time to blog as my appa is here. He needs to be given full attention! :)

Hmm.. the only way I ever made kovakkai was poriyal/fry. We had boiled peanuts last week and i was just thinking it would be nice in a curry. I will try this... should be good with a coconut paste too i think... like a kurma.

Sorry for my late reply. Actually, I read that kovakkai belongs to the cucumber family. I cook it the same way as we do kathirikkai. This is my first attempt for a gravy. If you are buying it for the first time, here is a tip. Get firm green ones. When you cut it it should not have any red or orange color inside. I mean it shouldn't be ripe.If it is ripe discard it. Try this recipe. You will surely like it.

sorry for my late reply. I love kovakkai fried in lots of oil too. But this was very different. I was reluctant too to try this. But the end result was great.
I see that you are busy with your dad. Take your time ma. I know how important and sometimes stressful this job can be. My mom is a doctor. she takes care of my granny (dad's mom) so good. Although she does more than her best my granny always complains. I wish I had the patience of my mom.:-)
